With the fiery heat of summer the last thing I want to do is turn on the oven and heat-up the kitchen. Here are some summer treats that won’t require the use of your oven!
Raspberry Banana Popsicles – One of our favorite summer-time treats are popsicles. They’re refreshing and cool. For us, it’s cheaper to make popsicles then to buy them at the store, especially with several raspberry bushes growing in our yard.
1-1 1/2 cup of Raspberries
¼ cup of Peach Juice (I used the leftover juice from a jar of peaches, but you can also use any kind of fruit juice.)
¼ cup of Sugar (Sugar can also be left out to make the popsicles healthier or you can try to use a little bit of honey as sweetener.)
Blend Ingredients in a blender until smooth. Put mixture in Popsicle molds and freeze for several hours.
Banana, Strawberry and Raspberry Smoothies – Another cool summer treat are smoothies!
12 oz. Strawberry Yogurt
½ cup Orange Juice
¼ cup Raspberries
1 cup of Frozen Strawberries
Blend ingredients in a blender until smooth. Pour mixture into cups and serve.
Shaped Crispy Cereal Treats – Shaped crispy cereal treats are easy to make and fun!
6 cups of Crispy Cereal
3 tbsp. of Butter
1 Package of Marshmallows
A few drops of Food Coloring
Melt butter in the microwave. Add marshmallows and heat for an additional 1.5 minutes. Mix in crispy cereal. Add a few drops of food coloring to the melted marshmallows and butter. Mix the cereal in with marshmallows and butter. Press the mixture evenly into a buttered pan (or you can spray it with cooking oil) using a buttered spatula. Let sit a few minutes to harden. Butter (or spray with cooking oil) a cookie cutter and press the cookie cutter into the crispy cereal treat. Pull the shape out and put aside on a plate. Continue until all the desired shapes are cut out. Then, push the remaining crispy cereal treat together and continue cutting out desired shapes. If wanted, add decorations like chocolate chips, icing, etc.
